I'm not sure what time of year you're aiming for (or what type of attraction), but, here are a few things (there are a lot more, but these spring to mind at the moment):

Fort Worth Museum of Science and History

Scarborough Faire (Waxahachie...outside of Dallas)

San Antonio Missions Trail

Sea World San Antonio

Fiesta San Antonio

SXSW (Austin)

ACL Music Festival (Austin)

This may not be a positive contribution ( for which apologies ). Theres a song done by "Asleep at the Wheel" entitled "Miles and Miles of Texas". The one time I went through part of it, that song kept coming back to me.

One of my all time favorite National Parks is Big Bend National Park (have been 4-5 times, in December, tent camping). Best to see in winter, with magnificent, varied scenary, mountain & flat area camping, Rio river floating, quiet, quiet, quiet whispering winds, fascinating, prolific birding. Haven't been there in 20? years, so I'm not too sure of safety of border situation now.

The other smaller area, which I've only been to once was Guadalupe National Park. Nice, but didn't have much time to explore.

I love deserts, so west texas is fascinating to me, but is not everyone's cup of tea.
