I notice that video is in "Microsoft video 1"

It's possible the compression is set so low that it can't properly save the image.

Here's a frame from an animation I rendered at "Compression Quality 49"

 

 

It is probably safer to choose (Full Frames uncompressed) if you don't want to render an image sequence.
