That's pretty neat!

It appears that at least part of the process uses projectors (seen above and slightly behind the artist on the framework).**

The initial part being that of filming the actors recreating the scenes from Van Gogh's paintings so there is something to project.

A hint of this appears to be in one of the photos where an artist is leaning off to the right as if to allow the full projection to appear on the canvas without her body/head blocking the light (?)

 

 

**Although another photo from a different angle makes it appear that those objects aren't projectors but just lights.

 

Added: I was going to guess they were using Dragon Frame stopmotion software and I started to investigate but then saw on their website that was indeed the case.
