The symbiont materials will only aimate if it is built to, in which case, it will do it automatically. The only thing you can probably animate manually is the colours and stuff like that, the same that you would any material. Open the drivers, go to the shortcut of the material, then insert keyframes and change the colours and anything else the symbiont lets you. The only ones that animate that I know of are in the vfx_animated folder. Apply those materials, and they automatically animate, you can see it when you render a movie.
